Rice Pudding:

1/3 Cup Rice   4 Tbsp. Sugar
¼ Tsp. Salt   4 Cups Milk

 

Wash rice and place in a baking dish. Add remaining ingredients and stir till mixed.
Bake at 350° F oven for one hour or until rice is done. To serve, you may add raisins, nutmeg or other spices.

Baked Beans

2 Cups navy or pea beans   ½ Tsp. Dry Mustard
1 ½ Tsp. Salt   1 Tbsp. Chopped Onion
2 Tbsp. Brown Sugar   1 Cup boiling water
¼ Cup Molasses   ½ Lb. Piece of salt Pork
1 Bay Leaf    

 

Wash beans discarding imperfect ones. Cover with water to soak overnight. Drain and cover with plenty of boiling salted water. Boil slowly for one hour. Drain.

Combine remaining ingredients (except pork rind) in a bean pot or casserole dish. Score pork rind and press into beans, leaving rind showing. Cover with more boiling water and bake @ 300° F for 4 hours. Remove cover for final 1 ½ hours.

Whole Wheat Cereal

4 Cups boiling water   1 Tsp. or Salt to taste
1 Cup cracked whole Wheat kernels    

 

Mix all ingredients and boil 15 minutes to ½ hour, stirring periodically.

Move from heat and cover.

Let stand until ready to serve with milk and sugar.
